  1. Heat the oven to 375 degrees F. make sure to turn the oven rack from top to second highest 
  2. Place a 10-inch oven-safe skillet.
  3. To take the chill off reheat the oil at medium-high heat.
  4. Add onion, asparagus, red bell pepper or all your favoured veggies. Cook until veggies are cooked thoroughly and browned. About 5 minutes, stirring at intervals. Mix the garlic and spinach and it rustles up in 1 minute. Or you can cook until the spinach gets drooped. sprinkle with salt and pepper for taste. And turn out the heat.
  5. In a medium bowl, whisk simultaneously the eggs, parmesan cheese, cottage cheese, and a bit of salt and pepper.
  6. Put on the egg mixture in the skillet over cooked veggies. Add the basil on top. Turn on the oven to medium heat, and cook for 1 minute to Make way for the bottom set up.
  7. In the oven bake until the top gets set, about 15 to 20 minutes. Frittata becomes rubbery if you over-baked, so make sure to be careful at the baking hour. You just want to cook the dish until it gets set or baked.
  8. Carefully pull out the Frittata from the oven and slice the Frittata into 4 wedges. Garnish with freshly cubed chives or with salad or berries, If desired.
