Ingredients for chicken and avocado burrito

  • 250g Chicken breasts(you can also add chicken thighs)
  • 1 tsp onion powder 
  • 1 tsp garlic powder 
  • 1/3 tsp black pepper 
  • Pinch of salt to taste
  • 1 tbsp olive oil
  • 1 1/2 cups rice(cooked)
  • Diced fresh coriander to taste
  • Lime juice to taste
  • 4 burritos sized tortilla wraps(heated in the microwave)
  • 150g grated cheese 
  • 2 medium avocados, finely chopped.

  • Medium bowl for rice
  • Cheese grater 
  • Frying pan and tongs
  • Chopping board and sharp knife 
  • Finally to serve aluminum foil 

The equipment and ingredients are basic and easy, right? Believe me, the same way the instructions to make the chicken and avocado burritos was damn easy!

 Instructions to make chicken and avocado burritos 

  1. Take a medium bowl and add a bowl of cooked rice then mix it with lime juice and coriander. Lime juice can be added according to your taste preference. And move the bowl aside.
  2. spatchcock your chicken breasts right through the middle or centre to form 4 even-sized chicken breasts. Overspread onion powder, garlic powder, olive oil, salt and pepper.
  3. In medium-high heat flame place a frying pan and until lightly burnt, fry two sides. After some intervals cube the chicken into small pieces and move them to one side.
  4. Take a tortilla wrap, in the bottom centre put in a tbsp of rice(which you prepared in the 1st instructions) then add 1/3 of your chicken breast. Next, layer it with avocado and drizzle over cheese
  5. Tightly roll the burrito and make sure to tight fold the sides. So no fillings miss after the tight fold. Slowly roll the burrito when you left with the last “one roll” add some cheese. It will act as glue while you cook the burritos 
  6. In a high-heat frying pan place a burrito, and start flipping rotating and roasting using pair of tongs, until the tortillas get brown or it was ready when grill marks appear.
  7. Repeat the same process for the remaining burritos
  8. Serve warmly and enjoy!

 

Notes for chicken and avocado burritos :

  • If you are a huge fan of baking, you can! Baking at 356F for about 20 minutes or until it gets golden brown.
